Almond Milk & Vanilla Steel Cut Oats with a Peach Compote

Rich, creamy oatmeal. Yum! This is next level oatmeal with a whole vanilla pod and almond milk. The compote can be made from any fruit, but I thought peaches would be an especially nice treat.

I bought the vanilla pods while shopping with my sister at a super cute kitchen store. Whenever I go into a store that sells pots and pans and kitchen utensils I always want one of everything. I love how highly specific things are - olive pitters, eggs slicers, oven mitts just for cast iron pans.

I don't know about you though, but I find myself buying all these things and forgetting to use them. I have my trusty kitchen friends - a great cutting board, a chef's knife, a great pot, and a silicone spatula. If you took everything else away from me, I wouldn't be thrilled, but I'm pretty sure I could still get it done in the kitchen.

Alton Brown won't buy anything for the kitchen that is single-purpose. I like that policy, but sometimes the one use things can really simplify our lives. Probably the single greatest one use item I have is my rice cooker. Just whack in the rice and water and forget it for 30 minutes - except for the times I've actually forgotten to turn it on...yikes!

Back to the oatmeal - I added the peach compote and the blood orange for flavor, but there's all sorts of other wonderful additions. Some of my favorites include - brown sugar, dried cherries or cranberries, cinnamon, and slivered almonds. One of my favorite bloggers, Cookie + Kate, just did an oatmeal post and has a great list of add-ons.

Almond Milk & Vanilla Steel Cut Oats with a Peach Compote

Makes 4 servings | Prep time: 5 minutes | Total time: 60 minutes

Oatmeal Ingredients

2 cups almond milk

1 cup water

1 cup steel cut oats

1 whole vanilla pod, seeds scraped out

salt, to taste

2 blood oranges, optional

Peach Compote Ingredients

2 cups frozen peaches

1 cup water

2 tablespoons sugar or honey

Instructions

Bring the peach compote ingredients to a boil in a small saucepan over high heat. Reduce to a simmer and let cook down for 40 minutes to 1 hour, depending on the desired thickness of the compote. Add a tablespoon or two of water to the compote if it is drying out too much while it cooks. Remove from heat.

Meanwhile, bring the almond milk and water to a boil in a large saucepan over high heat. Add the steel cut oats, vanilla seeds, and a pinch of salt, and reduce to a simmer. 

Cover and cook over low heat, stirring occasionally, for 20 to 25 minutes, or until the oats are al dente.

Serve, garnished with the peach compote and blood oranges.

This oatmeal (without the compote) can be reheated for up to 2 days. The compote will keep in the fridge for 4 days.
