I meant to post this recipe yesterday, but through a series of unfortunate events, the building I live in and the surrounding area lost power and water for almost 24 hours. We decided to stay somewhere else last night and I went back to our apartment to pack some bags of clothes and grab toiletries. It was really dark and I was fumbling around with a few tea lights in my hands, trying to find everything.

When I met up with my husband later I was chronicling all my woes about how hard it was to see and how I dripped wax everywhere - he stared at me for about 30 seconds and said, "Why didn't you use the super powerful flashlight you have?" I replied (rather rudely) that we don't have any flashlights (side note: we have two, apparently!), and he said, "Of course you have one, on your phone!"

I felt like such a dummy - I was running around with tealights and completely forgot about my very bright iPhone flashlight. Womp Womp. Clearly, you do not want to hang out with me in an emergency. If/when the zombie apocalypse goes down, you better hope I have banana bread with me, because that's all I'm bringing to the table!

That being said, you could do a lot worse than this banana bread in a zombie apocalypse.

What I love about this bread is just how moist it is. (side note: I looked for synonyms for the word moist...I know some people hate it, but the best one I could find was "not dry") It's also got a nice hint of chocolate with the cacao nibs and extra sweetness from the dried cranberries. It's a great breakfast, snack, or dessert. Basically, what I'm saying is I had three pieces of this bread yesterday.

Banana Bread with Cacao Nibs & Cranberries

Makes one loaf, about 8 servings | Prep Time: 8 minutes | Total Time: 1 hour 8 minutes

Ingredients

4 ripe bananas

1/3 cup melted butter

1 egg

1/2 cup sugar

1 teaspoon vanilla extract

1 teaspoon baking powder

1 1/2 cups all purpose flour

1/4 cup cacao nibs

1/4 cup dried cranberries

Instructions

Preheat the oven to 350 degrees F (175 C). Grease a 4 x 8 inch bread pan. 

Combine bananas and melted butter in a bowl. Using a fork, mash the bananas. 

Add the egg, sugar, vanilla extract, and baking powder and stir to mix. 

Add the flour and stir to combine. Then add the cacao nibs and cranberries and stir to combine. 

Add mixture to the bread pan and bake for 55 minutes to 1 hour, or until the top is golden brown. 

Let bread cool before removing it from the pan.
