This black rice and edamame Buddha bowl is a simple, vegan recipe that packs in nutritious fruit and vegetables. It's a flexible mix of veggies - so feel free to sub in and out anything you would prefer. My Buddha bowl contains bright, crunchy bell peppers to offset the mild sprouts and rich edamame. The radishes and cabbage also bring a welcome crunch!

This is exactly the kind of quick, easy lunch I like to take in to work or have on a weekend at home. The only thing that takes a bit of time is cooking the rice, and honestly, I'm lazy and use a rice cooker. For black rice, the standard cooking technique is 2 cups of water to every 1 cup of rice. Some people like to soak their black rice before they cook it. It certainly adds tenderness, but I've never found it essential.

Black Rice & Edamame Buddha Bowl with a Citrus Miso Dressing

Makes 2 bowls | Prep Time: 10 minutes | Total Time: 40 minutes

Dressing Ingredients

Juice of one orange

1 tablespoon white miso paste

1 tablespoon sesame oil

1 inch ginger, diced

pinch of salt

Salad Ingredients

2 cups cooked black rice

1 cup sprouts*

2 blood oranges, sliced

1 cup shelled edamame

1 red bell pepper, sliced

2 cups sliced purple cabbage

2 radishes, thinly sliced

cilantro to garnish, optional

Instructions

Combine the ingredients for the dressing and stir briskly to mix. Set aside.

Add half the black rice, sprouts, oranges, edamame, bell pepper, cabbage, and radishes to each plate. Add cilantro garnish if you wish.

Pour half the dressing on to each plate and serve immediately.

*I used leek sprouts. Radish sprouts would also be great in this combo.
