Grilled Endives & Pesto Shrimp

This is a super quick & easy dinner - it's under 30 minutes and very tasty. I love a simple but beautiful dinner recipe and these grilled endives and pesto shrimp certainly fit the bill.

The grilled endives are surprisingly mellow - nothing like their raw flavor and the hint of parmesan adds to the creaminess. This whole dish combines in a fresh and unique way. It's the perfect meal for a night when you want something healthy and homemade but don't want to spend hours in the kitchen.

Grilled Endives & Pesto Shrimp

Makes 2 servings | Prep Time: 2 minutes | Total Time: 25 minutes

Ingredients

3 Belgian Endives

5 or 6 jumbo shrimp

2 tablespoons pesto

3 cups of spinach and arugula mix

1/4 cup shredded parmesan

1 tablespoon olive oil 

Instructions

Heat grill pan over medium high heat until very hot. 

Cut endives in half and place them on the pan. Cook each side of the endives for 3 minutes. 

Combine the prawns and pesto in a bowl and stir till prawns are fully covered. 

Once endives are done cooking, place shrimp in grill pan and cook on each side for 1 to 2 minutes - until shrimp are pink and curled. 

Place greens on a plate or wooden cutting board, cover with olive oil and half the parmesan. 

Add the shrimp and endives to the plate and cover with the other half the parmesan. 

Serve immediately.
