This flavor pairing works so well because of the sharp, tanginess of the pomegranate molasses; the juicy, sweetness of the tomatoes; and the salty softness of the feta. This recipe also benefits from a large helping of fresh herbs - each mouthful gives you a wonderful taste of mint, basil, or oregano - or if you're lucky, all three.

Mediterranean Summer Salad

Makes 4 side salad servings or 2 main course servings | Prep Time: 5 minutes | Total Time: 10 minutes

Ingredients

24 ounces cherry, grape, and kumato tomatoes (using a medley increases the flavor*), sliced in half

1 cup crumbled feta

1/4 cup basil, roughly chopped

1/4 cup mint, roughly chopped

2 tablespoons fresh oregano, roughly chopped

3 tablespoons olive oil

2 tablespoons pomegranate molasses

salt, to taste

Instructions

In a large bowl, combine the tomatoes, herbs, and feta. 

Drizzle the olive oil and pomegranate molasses over the top and stir gently to combine. 

Top with salt and serve immediately or keep in the refrigerator for up to 2 days.
