Purple Cabbage Tabbouli Salad

I've got a pretty side salad for you today, with some gorgeous produce - including red cabbage, parsley, red onion, and pomegranate. This take on tabbouli salad could also be a great light lunch.

I'm enjoying the sweetness of summer vacation right now. I've had a week off work and I still have another week before I have to go back. I've been reading some great books - I just finished two recently that are part of the Earthsea series. They're written by Ursula K. Le Guin and regarded as the beginning of the popular young adult fantasy genre. I've read the first two and I highly recommend them.

Purple Cabbage Tabbouli Salad

Makes 4 servings | Prep Time: 8 minutes | Total Time: 25 minutes

Ingredients

1 1/2 cup thinly sliced, chopped red cabbage

1/2 cup bulgur

1 cup pomegranate arils

3/4 cup chopped parsley

1 small red onion, finely chopped

1/4 cup extra virgin olive oil

1 teaspoon salt

1/2 cup crumbled feta

Instructions

Bring a medium pot of water to a boil. 

Meanwhile, put bulgur in a medium, heat resistant bowl. Add 3 cups of water of boiling water and cover. Let sit for 15 minutes before draining excess water. 

Add red cabbage to boiling water on stove and cook for 1 to 2 minutes. Remove and drain, and run under cold water to stop from cooking further. 

Add the cabbage, pomegranate, parsley, onion, bulgur, olive oil and salt to a large bowl and stir to combine. 

Add the feta and stir gently to combine. 

Serve immediately or keep in the refrigerator for up to 2 days.
