The Detox Crunch Salad

This crunchy, healthy salad was inspired by a weekend of overconsumption. Part of my job is to plan big events, and I was in the midst of one that was a doozy - it consisted of several lunches and dinners over a 3 day period, and I found myself overeating incredibly rich, catered hotel food. At first, it's fun, and then you think, oh dear, please do not present me with another fried shrimp or crab rangoon - because I will eat it, and then feel terrible!

After running the final event, I willed myself to order the healthiest thing the hotel offered - which was a 'detox' salad. It inspired my Detox Crunch Salad in that it got its crunch from apples and celery. It got me thinking about a salad I could make for the post-holiday season, when we're all perhaps feeling a little uncomfortably full and trying to forget the exact number of cookies we consumed. 

Detox Crunch Salad | Shiny Happy Bright

This salad reminds me of a funny bit in Fawlty Towers, a tv show my family watched all the time. If you haven't seen it, I'd suggest this episode about the Waldorf Salad. In it, a pompous American guest demands a Waldorf Salad from the somewhat-of-a-nitwit British hotelier and an insane exchange ensues. Suffice it to say, for years my sister and I would do bits from the show about the Waldorf Salad - "It's celery, apples, walnuts, grapes! In a mayonnaise sauce!" 

You'll find no mayonnaise sauce on this salad, but I'll still dedicate it to all the little nerd-lets who thought they were hilarious quoting Fawlty Towers (as you might imagine, I was not the coolest teenager).

Detox Crunch Salad

Makes 4 servings | Prep time: 15 minutes | Total time: 15 minutes

3 cups seedless grapes, halved (I used green)
3 apples, diced (I used Red Delicious)
2 cups roughly chopped greens (I used a romaine mix)
1/2 cup diced celery, about 2 stalks
1 medium carrot, shredded
1/2 cup pomegranate seeds
1/2 cup walnuts, roughly chopped
1/2 cup pistachios, roughly chopped
1/4 cup dried cranberries
1/4 cup dried currants (or raisins)

3 tablespoons olive oil
3 teaspoons fresh lemon juice
2 teaspoons salt
1 teaspoon pepper

Combine all the ingredients for the salad in a large bowl. Combine the vinaigrette ingredients in a small bowl and whisk to combine. Pour over the salad and toss gently to combine. Serve and enjoy!
