This almond milk steel cut oats recipe is next level oatmeal with a whole vanilla pod and peach compote.
This rich, creamy oatmeal is totally great. We topped it with our favorite peach compote and some seasonal fruit.

Ingredients for Almond Milk Oatmeal
Peach Compote Ingredients
- 2 cups frozen peaches
- 1 cup of water
- 2 tablespoons sugar or honey
Oatmeal Ingredients
- 2 cups almond milk
- 1 cup of water
- 1 cup steel-cut oats
- 1 whole vanilla pod, seeds scraped out
- salt, to taste
- 2 blood oranges, optional
How to Make this Oatmeal Recipe
- Bring the peach compote ingredients to a boil in a small saucepan over high heat. Reduce to a simmer and let cook down for 40 minutes to 1 hour, depending on the desired thickness of the compote. Add a tablespoon or two of water to the compote if it is drying out too much while it cooks. Remove from heat.
- Meanwhile, bring the almond milk and water to a boil in a large saucepan over high heat. Add the steel-cut oats, vanilla seeds, and a pinch of salt, and reduce to a simmer.
- Cover and cook over low heat, stirring occasionally, for 20 to 25 minutes, or until the oats are al dente.
- Serve, garnished with the peach compote and blood oranges.
