I'm participating in the 2017 popsicle week with a bunch of other awesome bloggers. Billy from Wit and Vinegar, who may be the funniest blogger ever, pulls this together and I'm thrilled to be participating!

There are some seriously cool popsicles in #PopsicleWeek every year, but I'm showing you a super simple recipe that I know is quick and easy to pull together. I love an unusual flavor combination and when I got a massive amount of basil at the farmer's market this weekend, I knew I had to try this recipe.

Blueberry Basil Coconut Milk Popsicles
These blueberry basil coconut milk popsicles are an unlikely flavor pairing that I find delightful!
Ingredients
  • 1 (14 ounce) can full fat coconut milk
  • 2 1/2 cups blueberries (frozen or fresh)
  • 1 cup basil
  • 1/4 cup honey (or agave)
Instructions
1. Combine all the ingredients in a blender and blend on high speed until fully combined. 2. Divide evenly between 8 popsicle molds and freeze for at least 4 hours. 3. Serve and enjoy!
