There are some seriously cool popsicles in #PopsicleWeek every year, but I'm showing you a super simple recipe that I know is quick and easy to pull together. I love an unusual flavor combination and when I got a massive amount of basil at the farmer's market this weekend, I knew I had to try this recipe.

Blueberry Basil Coconut Milk Popsicles

These blueberry basil coconut milk popsicles are an unlikely and delightful flavor pairing!

prep time: 4 hour and 5 minscook time: total time: 4 hours and 5 mins

ingredients

  • 1 (14 ounce) can full fat coconut milk

  • 2 1/2 cups blueberries (frozen or fresh)

  • 1 cup basil

  • 1/4 cup honey (or agave)

instructions

  1. Combine all the ingredients in a blender and blend on high speed until fully combined.
  2. Divide evenly between 8 popsicle molds and freeze for at least 4 hours.
