Healthy Dark Chocolate Treats

These healthy dark chocolate treats are a ridiculously simple recipe!

They're topped with pistachios, pomegranate seeds, and orange zest. They take just a few minutes to assemble and 30 minutes to set in the refrigerator. I love these delicious, easy, and fun little treats!

Pomegranate seeds are one of my favorite foods. They're so versatile, but I obviously love them with chocolate. I made these for a party I have this weekend - I think they'll be a big hit. 

I'm calling these little treats healthy because they include dark chocolate, fruit, and nuts. I know they've got some sugar in them, but I like to acknowledge that sometimes life just needs to include dessert!

If you're a regular reader of this blog, you know my definition of healthy eating is pretty liberal. Initially, I started this blog because I was transitioning to a vegetarian diet. I lived in a small country in the Middle East and I wasn't happy about how meat was being sourced (everything had to be brought in via boat or truck - not very humane or sustainable). Since I've moved back to the US, I've been able to find a butcher that sells locally sourced, humanely raised meat and eggs. So, I've added quite a few recipes to the blog with ethically sourced meat over the past few months.

There are many recipes with carbs and sugar on this blog, but in general, I like to focus on whole foods, unprocessed food, and seasonal ingredients. I'm certainly not perfect, but I hope this gives you an idea of where I'm coming from on the health food thing!

Healthy Dark Chocolate Treats

These Healthy Dark Chocolate Treats are delicious and easy!

prep time: 40 minscook time: total time: 40 mins

ingredients

  • 6 ounces dark chocolate chips

  • 1/2 cup pomegranate seeds
  • 2 tablespoons orange zest
  • 1/4 cup pistachios, finely chopped

instructions

  1. Lay out a piece of parchment paper.
  2. Melt the chocolate chips, in a small bowl, in the microwave for one minute. Remove and stir till all the chips have fully melted but the chocolate still remains thick.
  3. Use a spoon to make 1 ½-inch wide discs of chocolate on the parchment paper.

  4. Sprinkle each disc with several pomegranate seeds, a pinch of orange zest, and a pinch of pistachios.
  5. Put the chocolate in the refrigerator for 30 minutes or until it has hardened.
