Peanut Butter Cookie & Cacao Nice Cream Sandwiches (Gluten free + Vegan)

People, this is not a drill - these are in fact gluten free, vegan nice cream sandwiches. And they are delicious. Clearly you need to go the extra step and roll them in sprinkles!

Peanut Butter Cookie & Cacao Nice Cream Sandwiches (Gluten Free & Vegan)

I'm in the midst of running a program for high school students right now and I'm exhausted. The students have so much energy and SO many questions. So many questions. They are lovely people, and I love my co-leaders, but I can tell I'm being a little too curt with my answers and my capacity for patience is ever diminishing. 

One of the reasons I know I'm feeling kinda crap is that I'm eating kinda crap. I ate a bunch of junk food yesterday while we were out on a road trip and it left me with the sugar blues. I'm a huge fan of desserts and treats and fun snacks, so it's not that I want to cut them all out, I just want to plan ahead and make sure I'm eating the desserts and treats that I will enjoy and that will also be kind to my system. 

These cookies do have sugar, but they also have almond meal and peanut butter, and the nice cream is made from bananas, almond milk, and cacao powder. So, while they're calorie dense, they also have some nutritious components. And, they're super yum. 

Peanut Butter Cookie & Cacao Nice Cream Sandwiches (Gluten Free & Vegan)

Treat yourself. Make these cookies and nice cream!

Vegan + Gluten Free Peanut Butter Cookies

Makes 35 to 40 cookies | Prep Time: 10 minutes | Total Time: 35 minutes


1/2 cup white sugar

1/2 cup brown sugar

1 cup peanut butter

2 teaspoons vanilla

1/2 cup almond milk

1 1/2 teaspoon baking powder

1 teaspoon salt

1 teaspoon allspice

2 1/2 cups almond meal/flour

3 tablespoons sugar (for coating)


Cream the sugars and peanut butter together in a bowl. 

Beat in the vanilla, then the almond milk. 

In a separate bowl, combine the baking powder, salt, allspice, and almond meal. 

Add the flour mixture to the peanut butter mixture, slowly, beating it to combine. 

Refrigerate dough for at least 30 minutes. 

Preheat oven to 375 degrees Fahrenheit (190 C). 

Roll dough into one-inch balls and then roll in reserved sugar to coat. Flatten the balls with a fork, making a criss cross pattern. 

Bake for 10 minutes or until golden brown. 

Cacao Nice Cream

Makes 2 servings or enough for 8 sandwiches | Prep Time: 3 minutes | Total Time: 5 minutes


2 frozen bananas

2 tablespoons cacao powder

1/4 cup almond milk


Combine all the ingredients in a food processor and blend until fully combined. Check that there are no banana chunks left. 

Serve immediately or combine with cookies for a nice cream sandwich. 

Instructions for Nice Cream Sandwiches

Place 3 tablespoons of nice cream between two cookies. Cover with plastic wrap and freeze for 30 minutes, before serving. 

Optional - roll in sprinkles.
