These ricotta toast recipes are the best! They are a fabulous brunch or easy lunch recipe. The first toast is delicious and savory with ricotta, grilled tomatoes, and avocado. The second is sweeter, with ricotta, fresh blueberries, and honey.

I need to make one thing clear - this is strictly a weekend toast in our household. I do not grill tomatoes on Tuesday mornings, I'm lucky if I get PB on toast during the week. But, on weekends, I'm all in on the fancy toasts

Savory Ricotta Toast Recipe

ingredients:

  • 2 pieces whole wheat bread
  • 1/2 cup part-skim ricotta
  • 1 cup blueberries
  • 2 teaspoons honey

instructions:

How to cook Savory Ricotta Toast Recipe

  1. Toast the bread.
  2. Spread 1/4 cup ricotta on each piece of toast. Followed by 1/2 cup of blueberries per piece.
  3. Drizzle 1 teaspoon of honey on each piece of toast.

Sweet Ricotta Toast Recipe

ingredients:

  • 2 pieces whole wheat bread
  • 1/2 cup part-skim ricotta
  • 1 avocado, sliced
  • 16 cherry tomatoes
  • 2 teaspoons olive oil
  • salt & pepper

instructions:

How to cook Sweet Ricotta Toast Recipe

  1. Heat a grill pan over medium-high heat. When hot, place the tomatoes in the pan and let cook till they burst (6 to 8 minutes).
  2. Toast the bread.
  3. Spread 1/4 cup ricotta cheese on each piece of toast. Followed by 1/2 the avocado slices on each toast.
  4. When tomatoes are cooked, half them between the toasts.
  5. Drizzle 1 teaspoon of olive oil on each toast, followed by a pinch of salt and pepper.
