This strawberry and lemon granita is exactly the dessert you need this week. How do I know this? Because it's exactly the dessert I needed to celebrate almost-June; it absolutely, positively hits the spot on a warm day. June is my favorite month, probably because it's my birthday month, but also because it begins the start of SUMMER. Summer is the most magical season - it's large scoops of ice cream cones eaten on a porch swing, it's catching lightening bugs in the front yard, 4th of July parades, trying to find something on TV because all your shows are on hiatus so you watch a zillion HGTV home renovation shows, weekend road trips, and swimming in lakes. 

Probably my favorite thing about this dessert is it reminds me of a slushie. While this is a healthy food blog, I'm not going to lie - I have a hard and fast affinity for those giant $1.49 slushies from Quick Trip that are electric blue. I know, so much dye and so much sugar, but they remind me of summers with my best friend. We used to ride our bikes up to Quick Trip and spend our babysitting money on slushies and then get brain freezes on the way home from drinking them too quickly. So, in honor of summer memories, I created the grown up version. Hope you like it!

Strawberry and Lemon Granita

This strawberry and lemon granita is basically an adult slushie.
prep time: 4 H & 10 Mcook time: total time: 4 H & 10 M

ingredients:

  • 1 cup water
  • 1/3 cup sugar
  • juice & zest of 3 lemons
  • 1 cup strawberries, puréed

instructions:

How to cook Strawberry and Lemon Granita

  1. Over medium heat, in a saucepan, combine sugar and water and stir till sugar is dissolved.
  2. Remove from heat and let the syrup cool. Stir in lemon zest, lemon juice, and strawberries.
  3. Freeze mixture in a metal bowl and stir every 30 minutes over the course of 3 to 4 hours.
  4. Serve while still slightly slushy.
