Watermelon Summer Salad

This healthy watermelon summer salad is so refreshing and bright! With the watermelon, cantaloupe, and apples cut into matchsticks, the flavors blend together and the salad looks playful and fun.

I've really been enjoying watermelon this month - it's in season from May to September, but it seems like it's at its peak right now. 

I've also been playing around with salads that travel well because we've been going to this outdoor concert venue a lot this summer and you can pack a picnic to bring along with you. I've had success with a few salads traveling well, but I wanted to try something new. This one does keep well in the fridge or taken along on a picnic, with these two caveats - you have to make sure the apple gets tossed well in the dressing (to stop it from browning - both the salt and lime help) and add a little bit more mint right before serving because it will look a little wilted otherwise (this is just an aesthetic preference though).

Watermelon Summer Salad

This healthy watermelon summer salad is so refreshing and bright!

ingredients

  • 1/2 small watermelon, cut into matchsticks


  • 1/2 cantaloupe, cut into matchsticks


  • 1 pink lady apple, cut into matchsticks


  • 3 tablespoons extra virgin olive oil


  • juice of one lemon


  • pinch of salt


  • 1/4 cup fresh mint, roughly chopped


  • optional - a few torn basil leaves


instructions

  1. Gently combine the fruit on a large plate. The watermelon will be very delicate and prone to breaking if not handled carefully.
  2. Combine the olive oil, lemon juice, and salt in a small bowl and whisk to combine.
  3. Top the fruit with the dressing and the herbs.
