White Bean Caprese Recipe

This simple summer salad requires no cooking and very little preparation! You'll love the flavors of this hearty white bean caprese salad.

Ingredients

  • 14.5 ounces white beans (1 can), drained and rinsed
  • 1 pint cherry tomatoes halved
  • 8 ounces pearl mozzarella balls
  • ¼ cup basil leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper

Instructions

  • In a large bowl, combine the white beans, cherry tomatoes, mozzarella balls, and fresh basil. Toss to combine.
  • Add the olive oil, balsamic vinegar, salt, and pepper to the bowl and stir to combine.
  • Allow salad to rest for 5 minutes before serving.

Storage - save leftovers for up to 4 days in an airtight container in the refrigerator. Allow salad to come to room temperature before serving.
