Blended Chocolate Avocado Pudding

Avocado is the secret ingredient that makes this chocolate pudding ridiculously creamy and rich!

Ingredients

  • 4 Medjool dates
  • 2 ripe avocados
  • ½ cup oat milk
  • cup cacao powder
  • cup peanut butter or almond butter
  • 2 tablespoons maple syrup
  • Optional toppings - berries whipped cream, or coconut flakes

Instructions

  • Soak the dates in some warm water for 10 minutes till they soften. Drain the water and remove the pits.
  • Add the dates, avocados, oat milk, cacao powder, nut butter, and maple syrup, blend in a food processor or blender, and blend for 1 minute or until smooth and thoroughly combined.
  • Serve immediately with optional toppings. Chill before serving if desired.

Notes

Storage - while it's best eaten right away you can store leftover pudding for 2 days in an airtight container in the refrigerator.
