Cajun Shrimp Boil

Ingredients

For the Boil

  • 1 ½ pounds small red baby potatoes
  • 4 ears corn shucked and cut into thirds
  • 1 lemon halved
  • 2 tablespoons Old Bay Seasoning
  • 1 tablespoon kosher salt
  • 1 bay leaf
  • 2 pounds large shrimp peeled and deveined, tails on
  • 2 tablespoons chopped fresh parsley

For the Cajun Butter Sauce

  • ½ cup unsalted butter 1 stick
  • ½ medium yellow onion finely diced
  • 4 garlic cloves minced
  • 1 ½ tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon Old Bay Seasoning
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons hot sauce optional
  • 1 tablespoon chopped fresh parsley

Instructions

For the Cajun Butter Sauce

  • Melt the butter in a small saucepan over medium heat. Add the onion and cook for 3 to 4 minutes, until softened. Add the garlic and cook for 30 seconds.
  • Stir in the Cajun seasoning, smoked paprika, and Old Bay and cook for 30 seconds. Add the Worcestershire sauce, lemon juice, and hot sauce (if using). Cook for 1 minute, then remove from the heat and stir in the parsley.

For the Boil

  • Fill a large stockpot with 3 quarts of water. Squeeze the juice from the lemon halves into the water, then add the lemon halves, Old Bay, kosher salt, and bay leaf. Bring to a rolling boil.
  • Add the potatoes and boil for 12 to 15 minutes (depending on their size) until they are nearly fork-tender.
  • Add the corn and cook for 4 to 5 minutes.
  • Add the shrimp and cook for 2 to 3 minutes, or until they are pink, opaque, and just cooked through.
  • Carefully drain the boil and discard the lemon halves and bay leaf.
  • Return the potatoes, corn, and shrimp to the pot. Pour about two-thirds of the Cajun butter sauce over everything and gently toss until well coated.
  • Transfer the shrimp boil to a large serving platter or spread it onto a parchment-lined table. Drizzle with the remaining Cajun butter sauce and sprinkle with fresh parsley. Serve with lemon wedges.

Notes

Storage - save leftovers for up to 3 days in the refrigerator in an airtight container.
Tips for cooking:
-Use large shrimp. Look for 16 to 20 per pound. They’ll hold up better for cooking and stay juicer!
-Stay close to the pot while you’re cooking the shrimp - as soon as they turn pink and curl, pull them off the heat.
