Cara Cara Orange Panzanella

Cara Cara oranges, tomatoes, red onion, and arugula mixed with a little oil and breadcrumbs make a delicious Panzanella.

Ingredients

  • 3 cups stale bread cut into 1-inch pieces
  • 2 Cara Cara oranges peeled and sliced into half moons
  • 3 cups cherry tomatoes halved
  • 1 shallot thinly sliced
  • 3 cups baby arugula
  • ¼ cup olive oil
  • juice of one lemon
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper.

Instructions

  • Combine the olive oil, lemon juice, salt, and pepper in a bowl and whisk briskly.
  • Toss the arugula, oranges, shallots, and stale (or toasted) bread in a bowl. Top with the dressing and toss again. Allow the salad to sit for 10 to 20 minutes so the bread soaks in the dressing.
  • Serve in a large low bowl or platter.
