Add the oil to a large skillet or pan over medium high heat. Once hot, add the pork. Smash till pork has flattened across the pan. Allow to cook for 3 to 4 minutes then flip over.
Cook for an additional 2 to 3 minutes and use a wooden spoon or spatula to break into small pieces.
Add the white and light green parts of the green onions, ginger, garlic, soy sauce, rice wine and vinegar to the pan. Stir for 30 seconds till the garlic is fragrant.
Add the cabbage and stir to combine. Cook for 4 to 5 minutes, until the cabbage has cooked down.
To make the sauce - whisk mayonnaise, sriracha, water, lime juice, and soy sauce in a small bowl till combined.
Divide the pork cabbage mixture between four bowls and top with the sauce. Sprinkle on the remaining sliced green onions.
