Salmon Boursin Pasta Recipe

This fantastic salmon pasta bake with Boursin cheese is a rich, flavorful meal the whole family will love!

Ingredients

  • 14.5 ounces protein pasta like Rotini or Penne
  • 5 ounces (1 box) Boursin cheese
  • 4 salmon fillets skin removed
  • 1 pint cherry tomatoes
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cups baby spinach

Instructions

  • Preheat oven to 425 degrees F.
  • Heat a large pot of water over high heat. Once boiling, cook the pasta according to package directions.
  • Meanwhile, add the Boursin cheese to the middle of a large pot or baking dish. Surround it with the salmon fillets. Add the cherry tomatoes and minced garlic to the pot and drizzle everything with olive oil. Sprinkle the onion powder, paprika, salt, and pepper over everything.
  • Bake for 20 minutes, or until the salmon is cooked through. 
Remove the pot from the oven and stir in the baby spinach and break up the salmon into pieces.
  • Stir in the cooked pasta and serve immediately.

Notes

Storage - save leftovers for up to 4 days in the refrigerator.
