Shaved Carrot Salad

This delightful shaved carrot salad is a refreshing snack or light lunch! It's a popular salad recipe because it's so easy to make and tastes great!

Equipment

  • Vegetable Peeler
  • Mixing Bowl

Ingredients

  • 2 medium-sized carrots cleaned and peeled
  • 1 tablespoon sesame oil
  • 1 teaspoon rice wine vinegar
  • 1 teaspoon toasted sesame seeds
  • ½ teaspoon flaky sea salt
  • ¼ teaspoon ground black pepper
  • squeeze of lime juice

Instructions

  • Use a vegetable peeler to peel the carrots into long, thin strips over a mixing bowl.
  • Add the sesame oil, rice vinegar, sesame seeds, sea salt, black pepper, and lime juice to the carrot strips. Toss several times to combine. 
  • Serve immediately.

Notes

Recommended Tools - It's easiest to make this recipe with a Y-peeler, but you can use a mandoline as well.
Storage - This recipe will keep in the refrigerator for up to 3 days when stored in an airtight container. However, it tastes best fresh - the carrots are crispest the day they're made!
