Almond Flour Sugar Cookie Bars

Ingredients

  • 1 egg
  • ¾ cup coconut sugar
  • ½ cup Greek yogurt
  • ½ cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups almond flour
  • 2 tablespoons vanilla protein powder
  • 1 teaspoon baking powder
  • optional - 1 tablespoon sprinkles

Instructions

  • Preheat oven to 350 degrees F.
  • Mix the egg, coconut sugar, Greek yogurt, applesauce, vanilla extract, and almond extract in a large bowl until fully combined. 
  • Then, stir the flour, protein powder, and baking powder until fully combined.
  • Spread the batter into an 8x8-inch parchment-lined pan.
  • Optional - If using sprinkles, spread them evenly across the batter and gently press them so they stick. 
  • Bake for 20 minutes. 
  • Remove the bars from the oven and allow them to cool for 10 minutes. Then, pull the side of the parchment paper to release the bars from the pan. Cut and serve.

Notes

Storage - leftover bars can be kept on the counter in an airtight container for up to 3 days, refrigerated for up to 1 week in an airtight container, or frozen for up to 3 months in a freezer-safe container.
Baking Tips - I highly recommend using parchment paper to keep the bars from sticking to the pan. You can also grease the pan if you'd prefer.
Specialty Ingredients - don't skip out on the almond extract! It adds essential flavor to the bars.
