Ingredients
- Almond Flour - I recommend using blanched almond flour (which means the skins have been removed from the almonds). It's finer and better for baking.
- Unsweetened Applesauce - adds sweetness and acts as a binder for the other ingredients.
- Coconut Sugar - used in place of brown sugar.
- Greek Yogurt - a fantastic, tart yogurt that adds moisture.
- Vanilla Protein Powder - adds both flavor and protein to the bars.
- Large Egg - adds moisture and structure to the bars. Use a room-temperature egg if possible.
- Vanilla Extract - an essential flavor for the sugar cookie base.
- Almond Extract - this is what gives the bars the classic sugar cookie taste!
- Baking Powder - makes the bars fluffier and lighter.
- Sprinkles - add your favorite sprinkle colors or whatever is in

Instructions

- Step 1: Preheat oven to 350 degrees F. Mix the egg, coconut sugar, Greek yogurt, applesauce, vanilla extract, and almond extract in a large bowl until fully combined.

- Step 2: Then, stir the flour, protein powder, and baking powder until fully combined.

- Step 3: Spread the batter into an 8x8-inch parchment-lined pan. If using sprinkles, spread them evenly across the batter and gently press them so they stick.

- Step 4: Bake for 20 minutes. Remove the bars from the oven and allow them to cool for 10 minutes.

- Step 5: Then, pull the side of the parchment paper to release the bars from the pan. Cut and serve.
Tips for Making These Bars
- Baking Tips - I highly recommend using parchment paper to keep the bars from sticking to the pan. You can also grease the pan if you'd prefer.
- Specialty Ingredients - don't skip out on the almond extract! It adds essential flavor to the bars.
