If you grew up eating rice krispie treats with marshmallows, you are going to love these bites. Like the OG treats, these are super easy to make. You can use peanut butter or almond butter (both are great).

They'll keep for several days in the refrigerator or freezer, so make a batch on the weekend and enjoy them all week long.

Ingredients

Here's what you'll need to make this tasty little treat.

  • 3 cups puffed rice cereal
  • ½ cup peanut butter (or other nut butter)
  • ⅓ cup maple syrup
  • ⅓ cup dark chocolate chips

Instructions

It's so easy to make these crispy bars, they just take a little time to set in the freezer.

  1. Line an 8x8 pan with parchment paper.
  2. Add the puffed rice to a large bowl.
  3. Heat the almond butter and maple syrup in the microwave for 30 seconds to one minute.
  4. Stir the butter syrup mixture into the puffed rice and then press it into the pan in an even layer.
  5. Put in the freezer for 40 minutes to set.
  6. Melt the chocolate chips in the microwave then drizzle over the top of the bars. Put in the freezer or refrigerator to set.

Tips for Making this Recipe

  • Make sure not to skip lining your pan with parchment paper - these bars are sticky and it will be difficult to remove them from the pan without the parchment layer.
  • You can use any puffed rice cereal you'd like for this recipe, but we like the Whole Foods Brown Puffed Rice cereal.
