These delicious heart-shaped Medjool dates are stuffed with peanut butter and topped with dark chocolate!

Ingredients
- Medjool Dates - fresh, ripe dates will work best - you want them to be a little sticky on the inside.
- Dark Chocolate - use dark chocolate chips or a bar of dark chocolate.
- Peanut Butter or Almond Butter - use your favorite nut butter to stuff the dates.
- To decorate - you can use freeze-dried strawberries or raspberries, chopped nuts, flaky sea salt, or sprinkles!

Instructions

- Step 1: Slice the dates and remove the pits. Tear the dates in half so you have two equal pieces. Press them together to form a heart.

- Step 2: Spread a little peanut butter onto the sticky side of the dates. Place the dates on a cutting board or baking sheet and freeze for 10 minutes.

- Step 3: Heat the chocolate in the microwave in 30-second increments till melted. Stir to make sure there are no lumps.

- Step 4: Dip the dates into the chocolate and use a fork to remove them - shake them gently to remove excess chocolate.

- Step 5: Place the dates on a piece of parchment paper and sprinkle the freeze-dried raspberries or other toppings on them. Allow to cool and harden for 10 minutes. Keep in the refrigerator till serving.
Tips for Making this Recipe
- Specialty Ingredients - You can often find freeze-dried strawberries or raspberries at Target, Whole Foods, and Trader Joe's. If not, they are available online from Thrive Market and Amazon.
- Recommended Tools - I highly recommend letting the dates rest on a piece of parchment paper or a silpat after dipping them in chocolate. This will keep them from sticking to another surface.
Make Ahead & Storage
- Storage - leftover chocolate covered dates should be stored in the refrigerator. Keep in an airtight container for up to a week.
