Dark Chocolate Coconut Balls

These dark chocolate coconut balls are made with just 4 simple ingredients. They don't require a blender or food processor, and they are the perfect sweet treat or snack. 

These healthy chocolate coconut balls are similar to an Almond Joy candy bar, but better and full of healthy fats.

These no bake chocolate coconut balls are small balls of sweet coconut mixed with almond butter and coated in a dark chocolate shell. Make them for a special occasion or just to have some little bites of healthy sweet treats around. 

This is a really easy recipe that you'll want to have on hand for any time you have a sweet tooth. They're especially great during the holiday season. 

These dark chocolate coconut bites are full of chocolatey coconut flavor and will surely satisfy all your chocolate cravings.

Ingredients

Just 4 ingredients you can find at your local grocery store are included in this no-bake recipe. It really doesn't get any easier than this. Here's what you'll need:

Coconut flakes, almond butter, dark chocolate chips, and maple syrup in glass bowls.
  • Almond butter - You'll use the almond butter to hold the coconut together. The flavor pairs wonderfully with the shredded coconut to make a coconut mixture filling. 
  • Unsweetened shredded coconut - You want to use coconut shreds for this recipe so they mix well. If you only have unsweetened coconut flakes, try pulsing them just a bit in a blender or even a coffee grinder. Just don't overdo it.   
  • Pure maple syrup or agave - We'll use maple syrup or agave to lightly and naturally sweeten the coconut inside the chocolate shell.  
  • Dark chocolate chips - We're going to melt these chocolate chips down and create a chocolate shell to cover the small balls of coconut. I highly recommend dark chocolate, but if you prefer milk chocolate or white chocolate, you can use one of those.

Instructions

Combine the almond butter and ½ cup coconut in a large bowl. Stir to combine.

Line a baking sheet with parchment or wax paper. Scoop out 1.5 tablespoons of the coconut filling (a cookie scoop can help with this) and roll it into 12 balls.

Add the coconut balls to the lined baking sheet and freeze for 20 minutes.

Place the dark chocolate chips in a microwave-safe bowl and melt in the microwave for one minute. Stir to melt the remaining chocolate. Microwave for an additional 20 seconds if necessary.

Dip the coconut balls in the melted chocolate and then place on a piece of parchment paper. Sprinkle the remaining coconut on top of the balls.

Freeze for 15 minutes before serving.

  • Chocolate - instead of dark chocolate, you can substitute in milk chocolate chips.
  • Toppings - you can top these bites with chopped nuts, freeze dried raspberries, or dried rose petals as well!
  • Nut Butter - any nut butter will work for this recipe, so feel free to use sun butter or cashew butter instead.

Storage

Ingredients

  • ½ cup almond butter
  • ½ cup, plus 1 tablespoon unsweetened shredded coconut
  • 1 tablespoon maple syrup or agave
  • ½ cup dark chocolate chips

Instructions

  1. Combine the almond butter, ½ cup coconut, and maple syrup in a mixing bowl. Stir to combine. 
  2. Using your hands, roll the mixture into 12 balls, about a tablespoon each. Place on a sheet pan or plate covered with parchment paper.
  3. Freeze coconut balls for 20 minutes. 
  4. Melt the dark chocolate in a microwave for a minute. Stir to melt the remaining chocolate. Microwave for an additional 20 seconds if necessary.
  5. Dip the coconut balls in the chocolate and then place on a piece of parchment paper.
  6. Sprinkle the remaining coconut on top of the balls. 
  7. Freeze for 15 minutes before serving.
  8. Save in an airtight container in the refrigerator for up to two weeks.
