Here's what you'll need to make this recipe.

  • ½ cup, plus 3 tablespoons white sugar
  • ½ cup brown sugar
  • 1 cup peanut butter
  • 2 teaspoons vanilla
  • ½ cup almond or oat milk
  • 1 ½ teaspoon baking powder
  • 1 teaspoon salt
  • ½ teaspoon allspice
  • 2 ½ cups almond flour

How to Make these Cookies

If you want to make peanut butter cookies, follow these instructions or check out the recipe card below:

  • Cream the sugars. Cream the ½ cup of white sugar, brown sugar, and peanut butter together in a bowl, using a hand mixer or a stand mixer for 3 minutes. Beat in the vanilla, then the almond milk.
  • Combine the dry ingredients. In a separate bowl, combine the baking powder, salt, allspice, and almond flour. 
  • Make the batter. Add the flour mixture to the peanut butter mixture, slowly, beating it to combine. Mix for 2 minutes. 
  • Chill the dough. Refrigerate dough for at least 30 minutes. 
  • Bake the cookies. Preheat oven to 375 degrees F. Roll dough into one-inch balls and then roll in reserved 2 tablespoons sugar to coat. Flatten the balls with a fork, making a criss-cross pattern. Bake for 10 minutes or until golden brown.

Tips for Making this Recipe

  • This recipe is easy to make, but do be sure to let the dough chill in the refrigerator for at least 30 minutes. If you've got the time, give it an hour in the fridge. This allows the dough to set and stops the cookies from spreading when you bake them.

There are absolute perfection and better than the more well known peanut butter cookie recipes that aren't as healthy. I didn't have plant milk in the fridge at the moment so I used regular milk but I doubt that would change anything. Added this to my list as my go to peanut butter cookie recipe for all time to come.
