Berry Arugula Salad

This delicious, fresh salad recipe is so easy to pull together! It's a wonderful side salad that everyone will love.

Ingredients

  • 2 tablespoons olive oil extra virgin
  • 2 teaspoons lime juice freshly squeezed
  • Zest of 1 lime
  • 2 teaspoons honey
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 5 ounces baby arugula
  • 2 ½ cups fresh berries sliced strawberries, blueberries, blackberries, and/or raspberries
  • ¼ cup crumbled feta cheese

Instructions

  • In a small mixing bowl, combine the olive oil, lime juice, lime zest, honey, salt, and pepper. Whisk briskly till fully combined.
  • In a large bowl, toss the arugula with the dressing.
  • Place the greens on a large, low bowl or platter and add half the berries and feta. Toss to combine and then top with the remaining berries and feta. Serve immediately.
