This bright and beautiful berry arugula salad recipe is easy to make and tastes fantastic!
This simple summer salad will be a hit at a backyard barbecue, 4th of July or Memorial Day party, dinner party, or weeknight meal.
Serve it alongside our chicken kabobs, grilled pork chops, or turkey burgers!

Ingredients
- Arugula - the baby arugula has a wonderful peppery flavor and grassiness. If you don't like arugula, you can swap for a spring greens mix.
- Fresh Berries - I recommend using a mix of strawberries, raspberries, blueberries, and blackberries. These bright, fresh berries add so much flavor and a pop of color!
- Feta Cheese - crumbly feta adds a wonderful mellow flavor to the salad. If you don't like feta, you can swap it for goat cheese, shaved parmesan, or mozzarella.
- Dressing - you'll use extra virgin olive oil, lime juice, lime zest, honey, salt, and pepper.

Instructions

- Step 1: In a small mixing bowl, combine the olive oil, lemon juice, honey, salt, and pepper. Whisk briskly till fully combined.

- Step 2: In a large bowl, toss the arugula with the dressing.

- Step 3: Place the greens on a large, low bowl or platter and add half the berries and feta. Toss to combine and then top with the remaining berries and feta. Serve immediately.
Tips for Making this Salad
- Serving Tips - I recommend serving this salad on a large plate or low bowl. It looks lovely when it's spread out, and you can see all the berries!
- Ingredients Tips - You can use any type of fresh berries in this recipe. If you want it to be red, white, and blue, I recommend using at least strawberries or raspberries and blueberries. Cherries, currants, and melon would also be nice in this salad!
- Diet/Allergy Alternatives - Leave off the cheese or use vegan feta if you'd like this recipe to be plant-based.
Storage
While this recipe is best served fresh, if you have leftovers, you can store them in an airtight container in the refrigerator for up to three days.
