Honeydew Salad Ingredients
- Honeydew - you'll use one fresh honeydew melon. To find the ripest melon, choose one that smells sweet and is heavy for its size. You can dice it, or if you want to be fancy, use a melon baller and scoop it into balls.
- Blackberries - fresh blackberries add a wonderful pop of fresh flavor and juiciness. You can substitute for blueberries if you'd prefer.
- Watercress - watercress can sometimes be hard to find at all grocery stores, but it has a lovely, bright, and light mustardy flavor that goes so well in this salad. If you can't find it, substitute it with baby arugula.
- Shallots - adds a lovely pop of allium and some sharpness to the salad. If your shallot is particularly pungent, soak it in water for 5 minutes to reduce some of the bite.
- Olive Oil - extra virgin olive oil is the base of the dressing, so use a good quality oil.
- Honey - fresh honey adds wonderful sweetness to the dressing. You can substitute for agave if you'd prefer. I do not recommend substituting for maple syrup.
- Lemon Juice - freshly squeezed lemon juice adds bold, bright flavor.
- Salt - finally, sea salt helps to bring out the best flavors of all the other ingredients.

Honeydew Blackberry Salad
Ingredients
- 1 honeydew melon scooped into balls
- 1 cup blackberries
- 1 cup watercress
- 1 shallot thinly sliced
- 3 tablespoons olive oil
- juice of one lemon
- 1 tablespoon honey
- 1 teaspoon sea salt
Instructions
- Combine the honeydew, blackberries, watercress, and shallots in a bowl.
- Combine the olive oil, lemon juice, honey, and salt in a small bowl and whisk briskly to combine.
- Dress the salad and serve.
Notes

- Storage - save leftover salad for up to 4 days in the refrigerator in an airtight container.
- Equipment Tip - If you don't have a melon baller, you can cut the honeydew into chunks, or you can use a circular teaspoon to scoop out balls of honeydew.
- Substitutions - you can use a red spring onion or green onions in place of the shallot.
- Dietary Note - if you'd like this recipe to be vegan, swap the honey for agave.
