Preheat oven to 350 degrees F. Combine the cottage cheese, flour, salt, and garlic powder in a large mixing bowl. Stir with a spoon till the cottage cheese is covered in flour, then knead till the dough comes together and can be shaped into a ball.
Roll out the dough with a rolling pin or stretch it with your hands (you may need additional flour if it’s too sticky). Form into at least a 12-inch circle and place on a parchment-lined sheet pan. Roll the sides up about ¼-inch to create a lip. Bake for 10 minutes.
Remove the dough from the oven and spread the tomato sauce across the dough, leaving a ½ inch gap along the edge of the dough. Sprinkle with Italian seasoning.
Top with mozzarella and optional toppings like sliced olives, cherry tomatoes, and fresh basil (I like to bake the pizza with half the basil and add the other half after it’s baked). Bake for 10 to 15 minutes or until the crust is crispier and lightly golden.
Remove from the oven and allow to rest for a minute or two before slicing.
