Brush both sides of all pork chops with olive oil. Reserve some olive oil if possible.
Combine the paprika, brown sugar, salt, garlic powder, onion powder, oregano, and cumin in a small bowl and stir together.
Sprinkle the seasoning mixture over both sides of the pork chops.
Place pork chops on a rimmed baking sheet or in a large baking dish. Drizzle with any remaining olive oil.
Bake for 10 minutes. Remove the pork chops from the oven and flip. Drizzle with any pan sauces.
Bake for an additional 7 to 10 minutes until the center of the pork chops registers 145 degrees on an instant-read thermometer.
Remove from the oven and place on a plate or cutting board. Cover with aluminum foil and allow to rest for 5 minutes before cutting and serving.
Notes
*You can use boneless pork chops as well, but they may need 2 to 3 minutes less baking time, depending on their thickness. Check the chops after a total of 15 minutes of baking time with an instant-read thermometer.
