Ingredients

  • 2 pounds bone-in pork chops
  • 3 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 tablespoon brown sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon cumin
  • Optional - freshly squeezed lemon juice

Instructions

  • Preheat oven to 400 degrees F.
  • Brush both sides of all pork chops with olive oil. Reserve some olive oil if possible.
  • Combine the paprika, brown sugar, salt, garlic powder, onion powder, oregano, and cumin in a small bowl and stir together.
  • Sprinkle the seasoning mixture over both sides of the pork chops.
  • Place pork chops on a rimmed baking sheet or in a large baking dish. Drizzle with any remaining olive oil.
  • Bake for 10 minutes. Remove the pork chops from the oven and flip. Drizzle with any pan sauces.
  • Bake for an additional 7 to 10 minutes until the center of the pork chops registers 145 degrees on an instant-read thermometer.
  • Remove from the oven and place on a plate or cutting board. Cover with aluminum foil and allow to rest for 5 minutes before cutting and serving.

Notes

*You can use boneless pork chops as well, but they may need 2 to 3 minutes less baking time, depending on their thickness. Check the chops after a total of 15 minutes of baking time with an instant-read thermometer.
