Hot Honey Beef Bowl

This delicious hot honey ground beef bowl with cottage cheese and sweet potatoes has so much flavor! Ready in only 35 minutes, this fantastic meal will be your new weeknight favorite.

Ingredients

  • 3 cups cubed sweet potatoes
  • 1 tablespoon olive oil
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 pound lean ground beef
  • 1 tablespoon taco seasoning
  • 2 cups cottage cheese
  • 1 large avocado diced
  • 4 tablespoons hot honey
  • 4 cups roughly chopped kale optional
  • 1 tablespoon olive oil optional

Instructions

  • Preheat oven to 400 F. Toss the sweet potatoes with the olive oil, cinnamon, salt, and black pepper on a baking sheet. Bake for 18 to 22 minutes or until fork tender.

  • Meanwhile, cook the ground beef in a frying pan over medium high heat. Once the beef has started to brown, add the taco seasoning to the pan and stir till combined. Cook the beef till it has fully browned and is cooked through.

  • Divide the ground beef and sweet potatoes between four bowls. Add ½ cup cottage cheese and ¼ of the avocado to each bowl. Top each bowl with 1 tablespoon of hot honey.

  • If serving with kale, massage the kale with a tablespoon of olive oil for 30 seconds and add to bowls.

Notes

  • To Make Ahead - You can make the beef and sweet potatoes up to 4 days in advance, but I recommend storing them separately from the cottage cheese so you can reheat them.
  • Storage - store components separately for up to 4 days in an airtight container in the refrigerator.
  • Reheat - Warm ground beef and sweet potatoes in the microwave or on the stovetop before combining them with the cottage cheese and avocado.
