This viral hot honey cottage cheese ground beef bowl with sweet potatoes is surprisingly delicious! You may be shocked by the flavor combination, but it has a wonderful balance of textures and tastes that pair so well.
It's similar to a burrito bowl, with cottage cheese substituting for both sour cream and shredded cheese. It adds wonderful creaminess and tastes great with the beef and sweet potatoes!

Cottage Cheese Beef Bowl Ingredients
- Ground Beef - I recommend using lean ground beef (I typically use the 90% fat-free beef). You can substitute for ground turkey or chicken if you'd prefer.
- Sweet Potatoes - you'll cut sweet potatoes into bite-sized pieces (or you can purchase them precut to save time). They are hearty, healthy, and add fantastic sweet flavor to the bowl.
- Cottage Cheese - I like using low-fat cottage cheese. I'm a fan of Good Culture cottage cheese - I love the smaller curds.
- Olive Oil - you'll use just a little to help the sweet potatoes cook (and to massage the kale if you are adding it). You can substitute for avocado oil or vegetable oil.
- Seasonings - you'll use salt, pepper, and cinnamon to season the potatoes and taco seasoning to flavor the beef.
- Avocado - use one large ripe avocado. If you have smaller ones, you may want to use two.
- Hot Honey - if you are sensitive to spice, you can use regular honey, but the hot honey adds great flavor, a little heat, and a lot of sweetness. You can make your own hot honey recipe as well, if you'd like to have more on hand.
- Optional - I like to add curly kale to the bowl. I like the extra fiber and sweet potatoes and kale pair so well! You can substitute any other greens you have on hand.

Notes
- To Make Ahead - You can make the beef and sweet potatoes up to 4 days in advance, but I recommend storing them separately from the cottage cheese so you can reheat them.
- Storage - store components separately for up to 4 days in an airtight container in the refrigerator.
- Reheat - Warm ground beef and sweet potatoes in the microwave or on the stovetop before combining them with the cottage cheese and avocado.
