I'm always looking for new ways to jazz up fish to make it a special meal and I've been loving this simple but flavorful herb citrus crusted cod dinner. It's a delicious way to turn cod from a tasty but slightly boring fish to an exciting meal.

Cod is one of my favorite weeknight meals because it cooks fast and works with so many flavor combinations. I like to serve it with my parmesan roasted green beans or simple sautéed zucchini for a fresh, easy dinner.
What You'll Need
- Cod Fillets - you can use any white fish you'd like for this recipe (cod, halibut, or haddock, etc), but I like cod because it's relatively inexpensive and easy to find at most grocery stores. The mild flavor of cod makes it easy to serve to even reluctant fish eaters (read: my toddler!)
- Citrus - both lemon and orange are used to create the citrus herb crust. You'll zest both of them, but you don't need to use the juice or flesh for this recipe.
- Olive Oil - a little oil helps the seasoning blend stick to the fish.
- Herbs & Spices - you'll use a mixture of seasonings including, dried oregano, dried thyme, dried dill, garlic powder, onion powder, smoked paprika, kosher salt, coriander, and black pepper to create the herby crust on the fish.

Instructions

- Step 1: Spread the lemon and orange zest on a plate and let them air-dry for a few minutes.

- Step 2: Combine the citrus zest, oregano, thyme, dill, garlic powder, onion powder, smoked paprika, kosher salt, coriander, and black pepper in a small bowl and stir to combine.

- Step 3: Pat the fish dry and brush with olive oil.

- Step 4: Sprinkle the seasoning mixture over the fish and pat to make sure it sticks.

- Step 5: Bake on a parchment lined sheet pan at 400 F for 10 to 12 minutes or until cooked through.


Citrus Herb Crusted Cod Recipe
Ingredients
- Zest from 1 large lemon finely grated
- Zest from 1 small orange finely grated
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried dill
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon kosher salt
- ½ teaspoon coriander
- ¼ teaspoon black pepper
- 1 ½ pounds cod fish fillets
- 1 tablespoon olive oil
- Optional for topping - finely chopped parsley
Instructions
- Preheat oven to 400 degrees F.
- Spread the lemon and orange zest on a plate and let them air-dry for 5 to 10 minutes, if time permits, so they don't clump in the blend.
- Combine the citrus zest, oregano, thyme, dill, garlic powder, onion powder, smoked paprika, kosher salt, coriander, and black pepper in a small bowl and stir to combine.
- Pat the fish dry and brush with olive oil.
- Sprinkle the seasoning mixture over the fish and pat to make sure it sticks.
- Bake on a sheet pan for 10 to 12 minutes or until cooked through.
- Top with optional chopped fresh parsley and serve immediately.
