Lemon Butter Baked Mahi Mahi

This wonderful simple baked mahi mahi is topped with a delicious seasoning blend and cooked to tender perfection.

Ingredients

  • 2 lemons sliced into thin rounds
  • 1 pound Mahi Mahi fillets
  • 2 tablespoons butter melted
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon onion powder
  • ¼ teaspoon ground black pepper
  • 2 tablespoons finely chopped parsley

Instructions

  • Preheat oven to 400 degrees F.
  • Line a rimmed baking sheet with aluminum foil. Lay the lemon slices on the baking sheet so the Mahi Mahi can sit on top of them. 
  • Place the fish on top of the lemons and brush them with the butter on both sides.
  • Combine the paprika, garlic powder, oregano, salt, thyme, red pepper flakes, onion powder, and black pepper in a small bowl. Stir and sprinkle over the fish, coating both sides with seasoning.
  • Bake the fish for 10 minutes, then broil on high for 1 ½ minutes. 
  • Remove from the oven and top with parsley. Serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator up to 3 days.
You can reheat the fish in the microwave, but I recommend covering it with paper towel while you heat it. Give it an additional squeeze of lemon juice after reheating as well.
