Marry Me Tortellini

Ingredients

  • 9 ounces cheese tortellini
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon crushed red pepper flakes
  • 1 cup vegetable or chicken stock
  • ½ cup sun-dried tomatoes
  • ½ cup heavy cream
  • ½ cup finely grated parmesan cheese
  • 1 tablespoon sliced fresh basil leaves

Instructions

  • Cook tortellini according to package directions.
  • Meanwhile, heat a large skillet over medium heat. Add the oil and once hot add the garlic, Italian seasoning, and red pepper flakes. Stir continuously for 30 seconds.
  • Add the stock, sun-dried tomatoes, and heavy cream to the skillet. Stir to combine and bring to a simmer. Allow to simmer on low for 15 minutes, stirring occasionally.
  • Stir in the parmesan and cooked tortellini. Top with the basil and serve immediately.
