This creamy, flavorful marry me tortellini recipe is a perfect date night meal!
You'll love how easy it is to pull together and the creamy, decadent sauce.

Recipe Features
- Based on the super popular 'Marry Me Chicken' recipe - the name may be a little silly, but the story is that the recipe developer was working with a videographer to shoot the recipe, and she said it was so good that "I'd marry you for that chicken!"
- Perfect for a date night meal, Valentine's Day, or a special weeknight dinner!
- The creamy sauce pairs beautifully with the tangy red pepper flakes and sun-dried tomatoes.
Ingredients
- Cheese Tortellini - use your favorite brand of refrigerated premade tortellini. If you'd like this recipe to be lower in calories, swap the tortellini for half a pound of penne or fusilli.
- Sun-Dried Tomatoes - tangy and delicious, try to find canned sun-dried tomatoes in oil. If you can only find the dry kind, allow them to soak for a few minutes in warm water before using them (drain them before using).
- Heavy Cream - the heavy cream provides the excellent, rich base of the sauce. I don't recommend swapping or omitting this.
- Parmesan Cheese - finely shaved parmesan adds fantastic flavor and saltiness to the sauce.
- Stock - I use chicken stock, but if you'd like to make this recipe vegetarian, you can use vegetable stock or broth.
- Fresh Garlic - minced garlic cloves add a punch of flavor to the sauce. Two large cloves or three small cloves is perfect for me, but if you love garlic, feel free to add more.
- Olive Oil - used to cook the garlic and heat the seasonings. You can swap for avocado oil or vegetable oil as well.
- Italian Seasoning - a wonderful blend of dried herbs. You can make your own Italian seasoning blend if you'd like!
- Red Pepper Flakes - even the small amount of crushed red pepper used in this dish adds a little (necessary) heat to cut the sauce's creaminess. If you are sensitive to spice, you can reduce the amount or omit if necessary.
- Fresh Basil - adds a lovely pop of color and fresh flavor to the dish!
See the recipe card for quantities.

Instructions

- Step 1: Cook tortellini according to package directions.

- Step 2: Meanwhile, heat a large skillet over medium heat. Add the oil, and once hot, add the garlic, Italian seasoning, and red pepper flakes. Stir continuously for 30 seconds.

- Step 3: Add the vegetable stock, sun-dried tomatoes, and heavy cream to the skillet. Stir to combine and bring to a simmer. Allow to simmer on low for 15 minutes, stirring occasionally.

- Step 4: Stir in the parmesan and cooked tortellini.

- Step 5: Top with the basil and serve immediately.
Tips for Making this Recipe
- Cooking Tips - Keep an eye on the sauce, you want it to simmer, not boil. If it's bubbling too much, the cream may burn, and the sauce won't taste as delicious.
- Recommended Tools - I highly recommend using a heavy-bottomed pot to cook the sauce; this will keep the heat even across the base.
- Diet/Allergy Alternatives - use vegetable stock instead of chicken for a vegetarian version of this recipe.
Make Ahead & Storage
- Storage - keep leftovers in the refrigerator for up to 3 days in an airtight container.
- Reheat - heat in the microwave in 1-minute increments till the desired temperature is reached. You may need to add a tablespoon or two of water to thin the sauce and make it creamy again.
