This one-pan dumpling bake is so easy to make and tastes phenomenal! If you like dumplings (or gyoza or potstickers), you've got to try this fun way to make them.
While it may affectionately be referred to as a dumpling casserole, you're actually poaching the dumplings in coconut milk and sauces, creating a wonderful creamy sauce.

Ingredients
- Dumplings - I've made this dish with chicken, pork, and shrimp dumplings. I think shrimp dumplings (the Trader Joe's ones are called gyoza) pair best with the flavors in the sauce, but all of them will work.
- Coconut Milk - both regular and light coconut milk work for this dish. I like Thai Kitchen's coconut milk because it's quite creamy, but feel free to use your preferred brand.
- Bok Choy - you can use baby bok choy or regular bok choy for this recipe, or swap for spinach if you'd prefer.
- Sauces - use a combination of Thai red curry (swap for yellow curry if you want less spice), soy sauce, honey, and rice wine vinegar to flavor the sauce.
- Aromatics - flavor the sauce with fresh ginger and garlic. Add green onions to garnish the dish.
- Toppings - sprinkle white and black sesame seeds on the finished dish. For a bit of heat, drizzle on some chili crunch or chili oil.

Baked Dumpling FAQs
Dumplings is the broad catch-all term that includes potstickers and gyoza. Potstickers (Chinese origin) are dumplings that can be steamed or fried, similar to gyoza (Japanese origin). Any of them will work for this recipe!
Yes, you can use coconut cream, but the sauce will be a little thicker. I recommend covering the pan with aluminum foil or a lid so the dumplings still steam.
Thai red curry is a little spicy (I didn't serve this recipe to my kid), so you can substitute it for Thai yellow curry, which is less spicy, or swap it out for the following mixture: 1 tablespoon turmeric powder, an additional clove of minced garlic, and an additional teaspoon of minced ginger.

- 1 9x13 inch baking dish
Ingredients
- 15 ounces coconut milk (1 can)
- 2 tablespoons Thai red curry paste
- 3 cloves garlic minced
- 1 inch ginger minced
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice wine vinegar
- 16 ounces shrimp dumplings gyoza or potstickers
- 4 baby bok choy chopped
- 2 green onions sliced
- 1 tablespoon sesame seeds
- 2 teaspoons chili oil optional
Instructions
- Preheat oven to 400 degrees F.
- Combine the coconut milk, curry paste, garlic, ginger, soy sauce, honey, and rice wine vinegar in a large baking dish (9x13 inch pan) and whisk to combine.
- Add the dumplings to the pan.
- Top with the bok choy and bake for 20 minutes.
- Remove the dumplings from the oven and top with sliced green onions and sesame seeds. Add optional chili oil. Serve dumplings on their own or with rice.
