Sheet Pan Sausage Dinner

Ingredients

  • 12 ounces sausage sliced into ½-inch rounds
  • ½ red onion sliced
  • 1 red bell pepper sliced
  • 1 orange bell pepper sliced
  • 1 zucchini cut into ¼-inch half moons
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat oven to 400 F.
  • Toss the sausage, red onion, bell peppers, and olive oil on a large sheet pan.

  • Top the sausage and veggies with paprika, garlic powder, onion powder, salt, and black pepper. Spread into a single layer.

  • Bake for 20 minutes or until the vegetables are tender.

Notes

Storage - save leftovers for up to 4 days in an airtight container in the refrigerator.
Reheat - in the microwave in 1 minute increments till desired temperature is reached.
