Healthier Pumpkin Spice Cookies
This healthy pumpkin spice cookie recipe is full of pumpkin, oatmeal, and spice! These cookies are fall in dessert form. They're lower in sugar than other pumpkin spice cookie recipes and can be made with or without the sugar drizzle.
We had a bit of a cold snap this weekend, so I've been transitioning to fall recipes - I've made several slow cooker soups (coming to the blog later this week!) I'm pretty excited about using pumpkin in a few recipes - I didn't really have access to pumpkin when I was living in the Middle East and last fall I was so busy buying and then setting up our new house and searching for a job, I didn't get many fall recipes up on the blog. I've got big plans to fix that this year!
Here are a couple pumpkin recipes from other bloggers that I'm looking forward to trying:
- 1 cup old fashioned oats
- 3/4 cup white whole wheat flour
- 1/2 cup cane sugar
- 2 1/2 tablespoons pumpkin pie spice
- 3 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 3/4 cup pumpkin puree
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1/2 teaspoon vanilla extract
