- 1 cup old fashioned oats
- ¾ cup white whole wheat flour
- ½ cup cane sugar
- 2 ½ tablespoons pumpkin pie spice
- 3 tablespoons butter, melted
- 1 teaspoon vanilla extract
- ¾ cup pumpkin puree
- ½ cup powdered sugar
- 1 tablespoon milk
- ½ teaspoon vanilla extract
How to Make Healthy Pumpkin Cookies
- Preheat the oven to 325 degrees F
- In a large bowl, combine the oats, flour, sugar, and spice and stir till mixed.
- Add the butter, vanilla, and pumpkin and stir till fully combined.
