Dark Chocolate Covered Clementines & Grapefruit

These dark chocolate covered clementine and grapefruit slices are an excellent holiday gift! 

So, talk about two weeks of utter craziness. We moved into a new house, I started a new job, celebrated my sister-in-law's wedding, and lived through a stunner of an election. This has been an emotional, exhausting, and exhilarating several days. I've been trying to keep up with the blog, but every post takes anywhere from 5 to 8 hours to do (from planning the recipes, testing them, photographing them, editing photos, writing posts, setting up the newsletter, etc), so it's been tricky to find the time. Posts have been few and far between this month, but as I settle into my schedule, I'm looking forward to getting back into my routine and spending more time here.

As I piece together my kitchen post-move I've discovered I have over-abundance of mixing bowls. I have somewhere on the order of 30 mixing bowls of varying sizes. The movers expressed concern over my love of kitchen supplies - they said they'd seen worse, but that I was pretty bad.

I just love these photos - the way the chocolate moves and hardens is stunning. You might be thinking this recipe is just an excuse to consume dark chocolate, and you would be right about that.

These little treats package up nicely and can freeze as well. They are perfect gifts, but remember they do cook down a bit, so if you need to give out lots of treats, you'll need to double or triple the recipe. 

You're probably thinking, what am I going to do with all the leftover clementine flesh after I make these? Do not fear, I have a bundt cake recipe coming out later this week that uses them all up!

Dark Chocolate Covered Clementines & Grapefruit

Makes about 2 cups | Prep Time: 3 minutes | Total Time: 1 hour 30 minutes


5 clementines

1 grapefruit

1 cup sugar

5 ounces dark chocolate


Boil a large pot of water. 

Slice off the ends of the fruit and score a line down each piece of fruit from top to bottom. Gently remove each peel, keeping the peels whole. 

Cut the peels into thin strips, about ¼ inch. 

Add the peels to the boiling water and blanch for 30 seconds and then remove (keep the boiling water going) and rinse under cold water. Add to the water and blanch for another 30 seconds and then drain and run the peels under cold water. 

Add 1 ½ cups water and the cup of sugar to a medium saucepan over low heat. Add the peels and bring to a simmer. Cover and let simmer for one hour. 

Remove the peels from the sugar and let dry on a rack for ten to fifteen minutes or until slightly hardened. 

Meanwhile, melt the dark chocolate and get a large piece of parchment ready for the drying peels. 

Dip the peels in the chocolate and let dry till hardened. 

Save in a airtight container or in the freezer.
