If you don't have either pre-cooked, hard boil your eggs using this method and either poach or sauté your chicken breasts.

Here's what you'll need.

  • 4 cups arugula
  • 3 hard-boiled eggs, halved
  • 1 ½ cups cooked chicken breast, shredded or diced
  • 1 cup heart of palm, cut into coins
  • 2 tablespoons chopped chives
  • 2 tablespoons olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • optional - chive blossoms to garnish


How to Make this Salad Recipe

  1. Assemble to arugula, eggs, chicken, and heart of palm on a large salad platter. Scatter the chives and chive blossoms across the top. 
  2. Whisk the olive oil, lemon juice, salt, and black pepper in a small bowl.
  3. Drizzle the vinaigrette across the salad and gently toss to combine. 
  4. Serve immediately.
