Mediterranean Summer Salad

Sharing is caring!

This Mediterranean Summer Salad recipe is heavy on tomatoes, fresh herbs, and flavor. This is an easy, healthy recipe that showcases summer produce.

Tomato and herb salad in a large serving bowl.

This flavor pairing works so well because of the sharp tanginess of the pomegranate molasses, the juicy sweetness of the tomatoes, and the salty softness of the feta.

This recipe also benefits from a large helping of fresh herbs - each mouthful gives you a wonderful taste of mint, basil, or oregano - or if you're lucky, all three.

Ingredients for a Mediterranean Salad

  • 24 ounces cherry tomatoes, halved
  • 1 cup crumbled feta
  • ¼ cup basil, roughly chopped
  • ¼ cup mint, roughly chopped
  • 2 tablespoons fresh oregano, roughly chopped
  • 2 tablespoons pomegranate molasses
  • pinch of salt

How to Make this Super Salad Recipe

  • In a large bowl, combine the tomatoes, herbs, and feta.
  • Drizzle the olive oil and pomegranate molasses over the top and stir gently to combine.
  • Top with salt and serve immediately or keep in the refrigerator for up to 2 days.
