Ingredients
- White Beans - used canned white beans (cannellini or great northern both work) - just make sure to drain and rinse them. Removing the bean juice will make them taste better!
- Tomatoes - use cherry or grape tomatoes for a juicy pop of flavor. Regular red tomatoes are great or you can use a mix of red and yellow.
- Mozzarella - use little pearl mozzarella balls (Perlini) if you can find them. You can also use Ciliegine which are just a little bigger as well.
- Fresh Basil - you'll want a whole handful of fresh basil in this recipe. I like to leave it whole because it looks so beautiful, but feel free to slice it to get more basil in every bite.
- Toppings - use extra virgin olive oil, balsamic vinegar, salt, and pepper to dress the salad.

You can use canned cannellini beans or great northern beans for this recipe. Butter beans (baby lima beans) will work as well, if you like them!

White Bean Caprese Recipe
Ingredients
- 14.5 ounces white beans (1 can), drained and rinsed
- 1 pint cherry tomatoes halved
- 8 ounces pearl mozzarella balls
- ¼ cup basil leaves
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- ½ teaspoon sea salt
- ¼ teaspoon ground black pepper
Instructions
- In a large bowl, combine the white beans, cherry tomatoes, mozzarella balls, and fresh basil. Toss to combine.
- Add the olive oil, balsamic vinegar, salt, and pepper to the bowl and stir to combine.
- Allow salad to rest for 5 minutes before serving.
