Ingredients
- Salmon - use fresh Atlantic (farmed) salmon or wild-caught salmon. Salmon is a staple in our house because it pairs so well with many flavors, and it's an easy fish to love!
- Tomatoes - small tomatoes like grape or cherry tomatoes work well in this recipe. You don't even need to cut them! When roasted, they are bursting with juices and pop in your mouth with a delicious, sweet flavor.
- Olives - adds a wonderful pop of flavor and salt to the dish. I recommend using a mixed olive blend, which is usually easy to find in your grocery store's deli section or olive bar.
- Red Onion - use a small red onion or shallot to add allium flavor to the dish. I wouldn't recommend substituting for a white or yellow onion - the flavor would be too different.
- Olive Oil - you don't need to use fancy olive oil or extra virgin olive oil since it's cooking at a higher temp. You can substitute for avocado oil.
- Seasonings - you'll use salt, pepper, paprika, and dried oregano to season the salmon and the veggies.
- Dill - using a little fresh dill adds a huge amount of flavor to this dish!
- Garlic - use a little fresh garlic to season the salmon and veggies.
- Feta Cheese - a small crumble of feta cheese adds a wonderful mellowness to the dish.
- Lemon - adding lemon to the salmon flavors it beautifully.

Instructions

- Step 1: Combine the olive oil, minced garlic, salt, oregano, paprika, and pepper in a small bowl.

- Step 2: Pat the salmon dry and add it to a large parchment-lined sheet pan. Spoon the olive oil mixture onto the salmon and spread till the salmon is covered. Place several lemon slices on top of the salmon.

- Step 3: Sprinkle the tomatoes, olives, and onions around the salmon. Sprinkle the feta and dill across the salmon, tomatoes, and olives.

- Step 4: Bake the salmon for 14 to 16 minutes until the internal temperature reaches 145 degrees F on an instant-read thermometer and the salmon flakes apart.
