This recipe is naturally vegan. It's also great if you're doing a whole 30. If you don't have a melon baller, you can cut the honeydew into chunks, or you can use a circular teaspoon to scoop out balls of honeydew.

ingredients

  • 1 cup watercress

  • 1 honeydew melon, scooped into balls

  • 1 cup blackberries

  • 1 red spring onion, cut into slivers

  • 3 tablespoons olive oil

  • juice of one lemon

  • 1 tablespoon honey (or agave)
  • 1 teaspoon salt

instructions

  1. Combine the watercress, melon, blackberries, and spring onions in a bowl or on a large plate.
  2. Combine the olive oil, lemon juice, honey, and salt in a small bowl and whisk briskly to combine.
  3. Dress the salad and serve.
