Ingredients
Here are the simple ingredients you'll need for this healthy frozen yogurt bark.
- Plain Greek Yogurt - I recommend using a full-fat Greek yogurt. It will freeze better than part-skim or low-fat yogurt, which tends to get a bit icy instead of creamy.
- Honey (or pure maple syrup) - you'll need a little sweetener for the yogurt.
- Vanilla Extract - this adds a delicious vanilla flavor to the yogurt base.
- Fresh Strawberries - sliced fresh strawberries top the yogurt. You can use frozen strawberries as well, but if they are whole or in large pieces, I recommend defrosting them and cutting them before using.
- Dark Chocolate Chips - you'll melt some dark chocolate to drizzle over the top of the bark. You can also use a dark chocolate bar or even milk chocolate chips if you'd prefer.
See the recipe card for quantities.
Instructions
Combine the Greek yogurt with the honey and vanilla extract in a medium bowl and stir till thoroughly mixed.
Line a rimmed sheet pan with parchment paper or wax paper. Spread the yogurt mixture onto the prepared baking sheet.
Sprinkle with the chopped strawberries.
Melt the dark chocolate in the microwave (in a microwave safe bowl) in 30 second increments till it is melted and drizzly.
Drizzle the melted chocolate over the yogurt and strawberries.
Freeze for 2 hours. Cut or break apart the yogurt bark into pieces. Enjoy immediately or store in the freezer in a freezer-safe container for up to 1 month.
Tips for Making this Recipe
Preparation Tips - It's essential to line your sheet pan or baking tray with parchment paper - it keeps the yogurt from sticking to the pan.
Diet/Allergy Alternatives - If you'd like this recipe to be dairy-free, substitute the Greek yogurt for coconut yogurt.
Storage
Store in the freezer in an airtight container or ziptop bag for up to 3 months. The bark will melt at room temperature, so remove it from the freezer right before serving.
Substitutions & Variations
- Vanilla yogurt - you can use vanilla yogurt instead of plain yogurt. Omit the vanilla extract from the recipe.
- Fresh berries - you can substitute the strawberries for other fresh fruit like raspberries or blueberries or add them in addition to the strawberries.
- Additional Toppings - you can add all sorts of additional toppings to this bark, like granola, coconut flakes, different fruits (like kiwi or pineapple), or chopped nuts.
