Vegan Chocolate Milkshake
Ummm. You are really going to like this vegan chocolate milkshake.
This drink is rich and creamy and relatively healthy - so YAAAY for this delicious recipe! I truly enjoyed it.
I'm always looking for creamy dessert-like items that don't contain dairy. Dairy and my insides don't get along too well, but I'm so in love with mint chocolate chip ice cream that I try to make it work. On my smarter days, I make something like this drink - it hits all the high points and doesn't leave me feeling gross.
I've been working on making the transition to almond milk in my cereal, instead of cow's milk. I'm not nuts about it yet, but it's better than the alternative of no cereal. Do you hold on to anything like this - something you know you probably shouldn't be eating, but you do anyway? I bet most people do - whether from force of habit or because of comfort; we probably all have a few hang ups. I don't beat myself up over it (my stomach already does that for me!), but I do try to provide better options.
Several years ago I was feeling so emotionally and physically low - I was frustrated by my lack of cooking and that I was often turning to fast food options so I didn't have to grocery shop and meal plan. I decided to research some different options and I went on a month long raw vegan diet. I felt amazing. I'd never gotten that much fruit and veg into my body before. I was forced to meal plan, because you basically have to take your own food everywhere (I live in a decidedly non-vegan city). It was amazing. People made fun of me, but when I compared what I was eating (sprouted wild rice with cherry tomatoes, tons of berries, and crudites) to what they were eating (overcooked pasta), I really didn't feel sorry for myself.
I ultimately stopped eating raw because it was incredibly difficult socially. I found that I couldn't eat out with friends and no one knew what to serve me when I came over for dinner. But, I always look back fondly at that month. I have never felt so satiated since then.
I've been asking myself, why can't I make more choices like I did that month? When I'm cooking for myself, why can't I get in the most fruit and veggies possible? It really does involve a lot of trips to the grocery store, but I know my general well-being is worth it, so it's something I'm going to work on.

Vegan Chocolate Milkshake
Makes 2 Servings | Prep Time: 3 minutes | Total Time: 5 minutes
2 tablespoons raw cacao powder
2 tablespoons brown sugar
1 very ripe banana
1/2 teaspoon vanilla
1 cup almond milk
3 cups ice
cacao nibs, optional
Combine the cacao powder, sugar, banana, vanilla, and almond milk in a blender on high speed for 30 to 45 seconds, or until all ingredients are thoroughly mixed.
Add the ice and blend on high for 30 to 45 seconds, or until the ice is broken down and the drink is frothy.
Sprinkle with cacao nibs (optional).
